Mexican Manicotti
1 lb. Hamburger 7 oz., Can Corn, drained
Salt & Pepper 1 ½ C. Jack Cheese, shredded
½ t. Garlic salt 1 pk. Manicotti Shells
¼ t. Cumin 2 -16 oz. Salsa
½ t. Onion powder 2 C. Lettuce, shredded
1 T. Olive Oil 1 C. Tomato, diced
16 oz. Can Refried beans Olives, sliced for garnish
Sour Cream if desired.
Pre-heat oven to 375 degrees. Add oil ,hamburger, salt pepper,cook on med high cook until brown, drain oil. In large mixing bowl add hamburger, beans, 1 ½ C. of cheese, corn, and seasonings set aside. Cook pasta according to package, drain, put back in pan and cover with cold water. Coat bottom of 8 x 13 in pan with salsa. Fill each manicotti shell with mixture, make single layer in prepared pan, pour remaining salsa over manicotti, top with remaining cheese, cover with foil. Bake 35 to 40 minutes, serve with lettuce, tomato, olives and sour cream
