Shephard's Pie
1 T Butter 1 T. Rosemary, minced
½ Med Onion, chopped Salt & Pepper to taste
1 carrot, minced 2 T. Flour
1 Medium turnip, chopped 4 C. Beef Stock
2 Lbs. Ground Lamb 4 C. Mashed potatoes

Melt butter in pan on medium heat, add onion, carrot, turnip and sauté till softened. Add lamb and seasoning cook till brown, drain off most of fat. Add flour cook 3 minutes till brown add stock and cook 15 minutes till thick. Pour into casserole or 8x13 pan, top with mashed potato, start at sides and slowly work around pan toward center, sprinkle with parsley and paprika. Bake at 350 for 45 minutes to an hour till casserole starts to brown, let rest 5 minutes to firm. Serve with peas.
